Blueberry Baked Oat Muffins - High Protein Breakfasts

You'll love this breakfast option because it's high protein, little ingredients and delicious!

Blueberry Baked Oats

  • 1 cup (245g) Greek yogurt, nonfat
  • 2 cup (162g) oatmeal or rolled oats
  • 4 medium eggs
  • 2 cup (290g) blueberries, raw
  • 26 Almonds, raw

Preheat air fryer to 320F degrees for about 3 minutes, or preheat oven to 350F. Mix the oats, yogurt, and eggs until well combined. Gently fold in the blueberries.  Chop the almonds.  Pour the mix in muffin cups or a bread pan and top with chopped almonds.  Bake in the air fryer for 10-15 minutes, or until a toothpick insterts into the muffin and comes out clean.  *To add sweetness, add honey.

Makes 9 muffins
